Recipe for Bee's Knees

We can’t very well have a site featuring bees and not give you a recipe for Bee’s Knees, can we?

This is a great drink on a hot summer day. You can use whatever honey you have on hand, part of the fun is trying different honeys to see how they work. (spicy honey, anyone?)

Step One:

Mix together an equal amount of honey and boiling water in a heat safe bowl or cup and mix until the honey is dissolved. About a teaspoon of each should work for one drink. Any extra can be stored in the fridge for about a month to be used in another Bee’s Knee or perhaps a nice cup of tea.

Step Two:

Add about 2 ounces of gin (a shot glass + a tiny bit more), a good squeeze of lemon juice (¾ ounce to be specific) and about half an ounce of the honey mixture in a cocktail shaker with a handful of ice. Shake it up until the outside of the shaker feels icy cold.

Step Three:

Strain into a cup and if you are feeling fancy garnish it with a strip of lemon zest. Traditionally you would use a coupe glass, but I don’t have one with a bee on it, so I’m not going to use one. Your choice though!
